Meet our Maker | Alessandro Pavoni
Sydney restaurant owner and chef Alessandro Pavoni began his career in Brescia, in Italy's north. After honing his skills and working in a number of Michelin-starred restaurants in Europe, he landed the role of Executive Chef at Sydney’s Park Hyatt. In 2009, the dream of opening his own restaurant Ormeggio at The Spit was born. Serving modern Italian food with magnificent waterviews, it gives locals a piece of Italian Riviera in Sydney!
Which restaurant / cafe are you from?
Ormeggio at The Spit, Chiosco by Ormeggio and the soon to be opened a’Mare in the Crown Sydney development at Barangaroo!
What inspired you to create your 'flavours of the world' dish?
My kids are 4 and 6 years old so I’m enjoying making things that they can help with. Using equipment like a KitchenAid Stand Mixer which makes it easier; making pasta that they can roll out, making things from scratch, cracking eggs, grating cheese, making mess! And this recipe ticks all those boxes! Plus, it’s delicious.
Go-to meal after a long day at work?
I’m actually an advocate of intermittent fasting so these days I’m often straight to bed after work if it’s late! If I manage to get home for family dinner with my wife and young children then that is a bonus and I will eat with them, my wife makes delicious meals.
What's your favourite dish to whip up for loved ones?
I have recently been learning all about different curries and I’m really enjoying the complexity of making my own curry pastes and creating flavours so far from my usual Italian. I make mainly vegetable curries and my kids also love it. It’s worth the time it takes to make it properly.
What’s your guilty pleasure?
Salame!
We know, for the time being we are no longer able to travel due to Covid, however if you could, what would be your destination of choice and why?
Right now, top of mind is Italy of course. I’m missing my brother’s wedding due to Covid which is really awful. I love going back to Italy to see friends and family, and I think it’s the best country in the world for such variances in climate, food, culture even in a tiny amount of distance. I love that I can travel from my family home in the mountains and just half an hour away be on Garda Lake in this bizarre little Mediterranean-like climate, looking at lemon and olive groves!
Another top destination of choice if only we could, would be New York - we had a trip planned there which has also fallen through. There is so many restaurants there that I want to visit!
