Ingredients
- Breadsticks
- 3 cups (330 grams) bread flour
- 1 teaspoon (4 grams) instant yeast
- ¾ cup (177 mL) warm water
- ¼ cup (60 mL) olive oil
- 2 tablespoons (30 grams) butter, melted and cooled
- 1 teaspoon (1 gram) dried oregano
- 1 teaspoon (5 grams) salt plus additional for sprinkling breadsticks
Whipped Feta Dip Ingredients
- 227 grams feta cheese
- ½ cup cream cheese, softened
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh basil leaves, chopped
- 2 tablespoons fresh chives, chopped
- 1 clove garlic, peeled and minced
- 2 tablespoons (30 mL) olive oil, plus more for drizzling
- 1 large lemon, zest and juice
- ½ teaspoon salt
- ¼ teaspoon black pepper

- Double Flex Edge Beater

Method

To prepare breadsticks, attach bowl and dough hook to KitchenAid Artisan Plus Stand Mixer. Add flour and instant yeast to bowl and mix to combine. On low speed drizzle in water, olive oil and melted butter. Add oregano and salt. Turn mixer off and scrape sides of bowl if needed then turn to speed 2 and let knead for 7 minutes. Turn mixer off and remove dough to greased bowl. Cover and let rise for 1 hour.

Preheat oven to 200C.

Punch down dough and divide into 4 quarters with bench scraper. Using bench scraper divide each quarter into 6 pieces, then roll and stretch into long thin breadsticks 25-30cm long. Transfer to pans lined with baking paper. Brush or spritz with water and sprinkle with salt. Bake for 10 minutes or until lightly browned and crunchy.

While breadstick dough is proofing make the feta dip. Attach clean bowl and double flex edge beater to KitchenAid® Artisan Plus Stand Mixer. Add cream cheese and cream on medium speed for 1 minute. Turn mixer off and crumble in feta. Glide speed knob to low speed and mix until mostly smooth. Add oregano, basil, chives, olive oil, lemon zest and juice, salt and pepper. Scrape into serving bowl and drizzle with olive oil. Serve with crunchy breadsticks.
Pro Tip: Goat cheese can be used in place of the feta for a more mild dip.
