Ingredients

  • ½ cup fresh coriander leaves

  • ¼ red onion, diced
  • 2 tbsp lime juice (juice of a small lime)
  • 1 tsp flake salt (or to taste)
  • ½ tsp raw sugar
  • 1 x 400g tin whole peeled tomatoes (San Marzano or similar), thoroughly drained of juice
  • *Option: for extra heat, add some pickled jalapeño chillies, and substitute Mini Mex Taco Spice with Tex Mex Taco Spice.
