Ingredients
- ½ cup fresh coriander leaves
- 2 tbsp olive oil
- 1 tsp Gewürzhaus Mini Mex Taco Spice
- ¼ red onion, diced
- 2 tbsp lime juice (juice of a small lime)
- 1 tsp flake salt (or to taste)
- ½ tsp raw sugar
- 1 x 400g tin whole peeled tomatoes (San Marzano or similar), thoroughly drained of juice
- *Option: for extra heat, add some pickled jalapeño chillies, and substitute Mini Mex Taco Spice with Tex Mex Taco Spice.

Method
- Place all ingredients except for the tomatoes into the KitchenAid Pure Power Blender and blitz to your desired consistency.
- Next, add the tomatoes and pulse once or twice.
- Serve with corn chips or over tacos.
