tips for making the perfect buttercake
Here’s our top five tips for buttercake perfection. Try a few (or all) of these tips for the next birthday, special occasion or any other cake-eating day!
- Start with room temperature ingredients
In a buttercake, the butter should be soft enough to properly cream together with the sugar. This also applies to the eggs and milk. To assist with beating, take your eggs and milk out of the fridge and bring it to room temperature at least 20 mins before starting on your cake.
- Use a stand mixer
Use a stand mixer or hand mixer to make the cake batter. This will ensure your butter mixture is fluffy and all the ingredients are thoroughly mixed and combined.
- Properly cream the butter and sugar together
To make a soft and fluffy cake, you need to properly cream together softened butter and sugar. Once it is mixed until smooth, add in the sugar and increase the speed of the mixer. Once creamed, the mixture should be light, fluffy, and pale in color. Be careful not to overmix this!
- Sift the flour for a smooth cake batter
Sifted flour is much lighter than unsifted flour, which make it easier to mix into other ingredients when forming your cake batter
- Avoid overbrowning!
Cook your cake in a 150 degree fan forced oven until it springs back lightly. It is ready when it’s golden on top. To avoid overbrowning of the top of the cake, cover it halfway while baking with a sheet of aluminum foil, ensuring the cake batter doesn’t stick to it.

Always wanted to know how to knead and perfect your own dough using your stand mixer? Here’s how!
The dough hook accessory is included with all of our stand mixer models and makes mixing and kneading dough a breeze.
Designed for use at speed 1 and 2 on your stand mixer, the dough hook will become your trusty sidekick when you are whipping up heavy dough mixtures such as pizza, pasta or bread dough.
Here are a few simple steps to get you started
- Add your ingredients to the stand mixer bowl whilst kneading on low speed
- Knead for 5 minutes on low speed i.e. 1 or 2. Always ensure that you knead on low speed so the motor doesn’t overheat
- When it's ready, the dough will leave the sides of the bowl clear and gather around the dough hook
