- 2 cups whole wheat flour
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp sea salt
- ½ tsp ground cinnamon
- 1 cup orange juice
- ½ cup maple syrup
- ½ cup apple sauce
- 1 teaspoon vanilla extract
- 1 ½ cups fresh cranberries
Preheat the oven to 180 degrees. Lightly oil the cups of a muffin pan or line it with paper liners.
Attach the flat beater and in your stand mixer bowl, mix together your 'dry ingredients' the flour, baking soda, baking powder, salt and ground cinnamon.
In a separate medium bowl, mix together the 'wet ingredients' the orange juice, maple syrup, apple sauce, and vanilla.
Pour the wet mixture into dry mixture and mix until combined
Fold in the cranberries
Evenly divide the batter between the muffin cups, filling them ¾ of the way full.
Bake until the muffins are golden brown around the edges for about 17 to 20 minutes.. Insert a toothpick and if it comes out clean it's ready.
