Ingredients
- 100g salad greens
- 225g Halloumi
- 50g stuffed green olives
- 50g Kalamata olives
- ½ red onion, thinly sliced
- 50g each of red, green and yellow capsicum, chopped
- 200g cherry tomatoes, sliced in half
- 1 small cucumber, seeds removed and chopped
Dressing
- 6 Juice of one lemon
- Zest of one lemon
- ½ cup olive oil
- 2 garlic cloves
- Pinch of sea salt
Method
- Slice the halloumi into thick slices and rub each side with olive oil.
- Place all the dressing ingredients into the Cordless Go Hand Blender jug and blend until smooth, set aside.
- Heat a grill plate over a high heat, when hot grill the halloumi on each side for 2 minutes until browned.
- Place salad greens into a salad bowl and top with all remaining salad ingredients, except halloumi.
- Arrange the halloumi on the top of the salad. Pour the dressing over the salad when ready to serve.
