Ingredients
- 1/2 cup sugar
- 1 cup water
- 300ml espresso coffee
- 200ml thickened cream

- KitchenAid® Go Cordless 5 Cup Food Chopper
- KitchenAid® Stand Mixer
- KitchenAid® Ice Shave Attachment
- Serving Glasses
Method
- Place sugar and water in a small sauce, place over a medium heat and stir until sugar is dissolved. Bring to the boil and let simmer for 5 minutes.
- Turn heat off and let cool for 10 minutes, then add the espresso.
- Let sit until completely cool. Pour into shave ice molds and freeze overnight.
- Using the whipping blade in the cordless 5 cup food chopper whip cream and set aside.
- Attach shave ice attachment to stand mixer and using the fine blade shave coffee pucks straight into serving glasses, top immediately with cream and sprinkle with coffee beans. .
