  • 1 Apple
  • 1 Pear
  • 1 teaspoon Coconut Oil
  • 1 tablespoon Rice Syrup
  • 1 tablespoon Thyme
  • 3 Eggs
  • 2 tablespoons Flour
  • Pinch of Salt
  • 2 tablespoons Milk
  • 2 tablespoons Blue Cheese, crumbled 
  • 1 teaspoon Olive or Coconut Oil

    Heat your oven to 175C.

  2. Cut your apple and pears into slices. Heat a frying pan over medium heat with a teaspoon of coconut oil. Add apple, pear, rice syrup and thyme. Fry until fruits start to soften. Drain and put to side. 
  3. Seperate egg whites from yolks. Whip whites until foamy, then using a wooden spoon mix flour, salt, yolks, milk and cheese.

  4. Place cast iron pan with olive or coconut oil in your oven just until warm. Spread it around the pan. Pour the egg mix into it and place fruits on top (it may fall into the foam).
  5. Bake until golden and serve in pan.
